Smoothie Bowl


You’ve probably heard of açaí bowls.  The hype around the berry is valid - the berry is full of antioxidants (10 times more than blueberries) as well as providing fibre and not too much sugar.  However, most of the bowls you have are normally made using juice blends…these contain far far less of the antioxidant content.  So in order to keep the antioxidants you need to eat the fruit fresh (fine if you’re in South America, otherwise a little challenging!) or use freeze-dried powder which is typically expensive.  

As I prefer to try and eat local produce as it’s typically more sustainable and environmentally friendly, I decided to replace açaí with a Bavarian alternative.

So I used SUPERGOODFRUITS freeze dried wild bilberry powder, all regionally made. You can read about the health benefits of these European blueberries on my blog here  or on the SUPERGOODFRUITS website.

You need a good blender for this (I have a Blend Active, but any NutriBullet type product will do).

Throw all your ingredients into the blender and mix up.  (You might need to shake it a couple of times to ensure everything gets well mixed together).

Isn’t that colour gorgeous!?

Then pour the thick frozen-creamy mixture into a bowl and top with fresh fruits / coconut flakes - or you could use berries, seeds or nuts….

  
...and tuck into a deliciously refreshing and healthy breakfast.


Ingredients
  • 2 tablespoons SUPERGOODFRUITS smoothie powder (I used wild bilberry, but they have a great range to choose from here)
  • 150ml almond milk (or any milk you prefer)
  • 1 frozen banana
  • 200g frozen berries
  • 1 tablespoon nut butter (I used almond)
  • a squeeze of agave syrup (or honey if you prefer)
  • toppings of your choice
