From our Ayurveda meal we found ourselves in this situation with some of the pumpkin soup (read about the original dish here) and some of the rice (read about it here).
So what did we do…make another dish! We fried up some red onions
And the leftover veggies and pumpkin soup…
Warmed it through, letting it all thicken together.
(yes I realise it looks gross...kind of diarrhoea in colour - plus 'texture'!)
And ta-dah…a hearty veggie rice dish, topped with some plain yoghurt and chopped fresh herbs.
Super easy and tasty!
