Sometimes I’m really in the mood for a dessert and this mousse ticks all of the taste boxes without putting a load of chemicals or artificial flavours into your body - plus it’s easy to make and lasts for a few days in the fridge.
Just throw all of the ingredients into your blender / food processor until it forms a smooth mousse.
Then leave in the fridge for about an hour…
...before decorating and tucking in!

Ingredients
- 1/4 cup coconut oil (liquid form, if you can’t find then just melt the solid version)
- 1 large ripe banana
- 1/2 punnet ripe fresh raspberries
- 1/2 cup SUPERGOODFRUITS freeze dried raspberries
- 1 tsp vanilla extract
- 1 ripe avocado
- 1 tbsp maple syrup
- pinch of salt
- basil leaf for the topping
