Ayurvedic Cooking - orange, mango & pear dessert


To finish up our three-course cooking feast we ‘free-styled’ a wintery dessert.  Read about the starter (pumpkin soup) here and main (mixed veggies & rice) here.

We peeled and chopped the mango and pears


Then made a ‘marinade’ from lemon juice, zest, honey and hot water to soak the chopped fruits in


Roasted the almonds and pine nuts - giving the kitchen a gorgeously christmas smell, especially once I started grinding up the cinnamon.

Then we set to work on the vanilla…

Before filleting the oranges - another first for me


Next we warmed up the fruits in a pain - softening them up and releasing their sweet flavours



Once soft, we took them out and heated up the ghee, cinnamon and vanilla


Adding the orange pieces to the spices and honey


Once they were coated in the sweet spices, we added the warmed mango and pear


It smelt like heaven as the dessert simmered in the pan


Finally it was time to create the dish.  Half of the fruits were blended up to create a mousse…


…and a scoop of vanilla ice cream added to the warm fruity pudding - I don't think technically it's aligned to Ayurveda cooking strictly but was a perfect addition.

And it tasted gorgeous too



Highly recommend giving this a go - and you can make it with any fruits that take your fancy

Ingredients

  • Sliced almonds
  • pine nuts
  • 1 mango
  • 3 pears
  • 2 oranges
  • half a lemon
  • vanilla pod
  • cinnamon stick
  • honey
  • ghee
  • sprig of mint (for decoration only)
